A Little Honesty. A Lot of Growth

I was thinking about Fall yesterday. It’s still very much the middle of summer here in south Texas (not sure Fall will ever come!), but thinking of Fall made me think of the holidays with all their yummy goodness. So, here’s a recipe I make every year. I think it originally came from a lady named Brenda Krause in Iowa, but my mama has been making it for as long as I can remember and now I do as well. The kids love it! Bonus for the mamas- it’s super simple.

CORN PUDDING

1 can whole kernel corn

1 can cream style corn

1 stick of butter

3 oz. cream cheese

2 eggs

1 box Jiffy corn muffin mix

Blend cream cheese, butter, and eggs. Add other ingredients. Bake at 350 degrees for an hour.

My note- it’s done when it starts “cracking” in the middle, you don’t want it to be jiggly. If you shake it and it jiggles, it’s not done.
